Find it puzzling to live in a state bordering Mexico and not see any Cinco de Mayo celebrations. Oh well. I know how to make my own tortillas and salsa and guacamole. Mangia!
I've learned that no amount of oil/cooking spray will keep the dough from sticking on the press, so have begun to use plastic wrap for an easy peel-off approach.

Cinco de Mayo is a state holiday... in the state of Puebla, Mexico. Just like the U.S. as a whole does not celebrate Cesar Chavez day (your state probably avoids that one, as does AZ) not the whole country of Mexico celebrates the liberation of one city from one army in the 1800's.
