Tonight is our last Residential Small Group gathering and I just broke my "fruit is not a dessert" rule to make a lemon blueberry cheesecake concoction.
Despite not having cake pans, nor a pan large enough to create a bain marie for the cheesecake layer, I think it turned out well!
As most of my group are seniors, I am giving them all bakeware to take to their various college campuses in the autumn. Baking treats is a great way to make new friends and doing something tactile is a great stress reliever.
